PB Anzac Biscuits

1C rolled oats
1C coconut
1/2 C flour
All into a large bowl & mix.


Melt over low heat-
60g butter
1/2C Te Whānau Smooth peanut butter
1/2C golden/ maple/ rice bran syrup or honey
1/3C sugar

Dissolve 1tsp baking soda in 3 Tbsp boiling water & add to wet mixture.

Pour wet ingredients into dry mix & combine.
Can cool for 5mins or pop into fridge.
Oven to 180C. Roll mixture into balls & place on lined tray about 4cm apart. If too much mixture, do a second tray rather than squeeze them onto one.
Back 12-15mins. They be golden brown & delicious.
Allow to cool.
